Tabbouleh
  1. In a bowl, add

2/3 cup whole grain couscous

2/3 cup boiling water

1/2 tsp onion powder

1/4 tsp cayenne pepper powder

1 tsp poppy seeds

Pepper to taste

2. Wait a few minutes for the couscous to absorb all the water. Meanwhile, prepare

1 cup tomatoes, diced (I used cherry tomatoes)

1-2 cups fresh parsley cut into very small bits* (I used curly parsley)

Juice 1/2 lemon

1/2 tbsp shallots, minced

3. Mix everything together and serve.

*I love when there is a lot of parsley in my tabbouleh. I find it adds so much flavour to the dish, but I also tested it with only a cup of parsley and it’s nice as well :). You do you!
