Super Easy Vegan Pancakes
1- In a bowl, mix
1 tbsp ground chia seeds
3 tbsp water
2- Add
1 cup plant-based milk
1 tsp vanilla extract
1/4 cup applesauce*
3- Add
1 cup whole wheat flour
1 tsp baking powder
1/4 cup unsweetened chocolate chips (optional)**
4- In a pan, cook (the size of pancakes you feel like eating is really up to you :)) until the top forms bubble and then flip to cook for about a minute more.
*You could also transform this recipe into banana-chocolate pancakes by substituting the applesauce with 1 mashed banana.
**Instead of chocolate, you might also wish to add wild blueberries.. or even add in both while you’re at it ;)!
This recipe is very forgiving. The batter does not stick to the pan at all. The pancakes cook quickly and have a wonderful texture, whether you choose to add in fresh fruit or you choose to substitute the applesauce with a banana. This is a great WFPB recipe for beginners, as it is practically fail proof. Even the first pancake in a batch comes out great, no matter what changes you make to the recipe.
