Instant Pot Lentil Chili

1- In an Instant Pot, sauté

2 onions, diced

4 garlic cloves, minced

3 carrots, diced

2- Add

1 tbsp cayenne pepper flakes

1/2 tsp smoked paprika

1 tsp ground cayenne pepper*

1 tbsp ground cumin

Juice 1 lime

1/2 tsp lime zest

3 tbsp chili powder

1/4 tsp ground turmeric

Pepper to taste

3- Add

2 cans (400 ml) tomatoes

2 cups water (use to rinse out cans)

1 1/2 cups green lentils**

4- Press Cancel and cook on high pressure for 9 min.

5- Release pressure manually

6- Add

2 cups frozen corn

1 tbsp nutritional yeast

7- Serve with

1/2 avocado per portion

cilantro to taste

*This chili is quite spicy. Adjust cayenne pepper to your preference.

**Brown lentils or beluga lentils could do the trick. For brown lentils, cook 10 min. For beluga lentils, cook 11 min.
