Beluga Lentil Soup (Instant Pot)

This soup is full of flavour and depth and is very filling. If you wish for it to be less thick, simply add less lentils.

*Beluga lentils keep their shape while cooking and are delicious in soups, since they add texture to them. If you do not have any, brown or green lentils can do the job quite well, simply adjust the cooking time accordingly (10 min for brown lentils, 8 minutes for green lentils). Red lentils could do as well, but would break down in the soup and make it really thick. If you do use red lentils, cooking time is only 1-2 minutes in an Instant Pot.

1- In an Instant Pot, sauté

2 onions, diced

5 garlic cloves, minced

1 jalapeno, diced

2- Add

1 bay leaf

2 tbsp savory spice

1 tsp black cumin seeds

1 tsp garlic powder

1 tsp onion powder

1 tsp dried basil

1 tbsp herbes de provence

1/2 tsp dried oregano

1/2 tsp cayenne pepper flakes

1/4 tsp smoked paprika

1 tsp sun-dried tomatoes séchées cut up in very small pieces

3- Add

2 tbsp balsamic vinegar

1 can tomatoes (398 ml)

2/3 cup tomato paste

4 1/2 cups water

1 cup beluga lentils*

4- Press Cancel on your Instant Pot and Pressure Cook on high for 12 min.

5- Release pressure manually, or wait on keep warm until you are ready to eat.
