Whole Wheat Tortillas
1- In a bowl, mix
2 cups whole wheat flour
3/4 cup hot water
2- Knead until the dough ball is no longer sticky, but still holds well.*
3- Let rest for 3 minutes.
4- Separate into 50g balls (8). Cover with a damp cloth until you have formed tortillas.
5- With a rolling pin, stretch out dough until it becomes 1/2-1mm thick tortillas. Cover with a damp cloth while waiting to cook them.
6- In a pan on high heat, cook one side of the tortillas until bubbles form, then turn it around.
7- Store in a container with the lid on for a while (the steam it will produce is ideal, since it will make for more flexible tortillas).
8- Eat right away or store for further use. Can be frozen.
*I use my stand mixer on medium speed, for 3-5 min.
