Easy and Quick Sandwich Bread (ready in 1 hour)

Wet Ingredients

1- In a bowl, mix

2 cups warm water (110 Fahrenheit)

2 tsp maple syrup

1 tbsp instant dry yeast

Dry Ingredients

2- In another bowl, mix

4 cups whole wheat flour

1 tsp baking powder

3- Add wet ingredients and mix gently. I usually start with a fork and then I switch to a flexible dough cutter* to mix until everything is combined (if you do not see any flour lump anymore, it’s ready to go !).

4- Line a baking mold (9X5) with parchment paper and poor the dough on top.

5- Cover with the bowl with which you have mixed the ingredients (if it fits) and wait 20 min. (If you choose to use something else to cover the dough, make sure it is not a flat surface, otherwise, the dough will stick to it while rising).

6- Meanwhile, preheat oven at 390 fahrenheit.

7- Bake for 40 min et 390 Fahrenheit.

I love homemade bread!! But sometimes, I get discouraged when thinking of how long I would have to wait for the dough to rise or how much kneading would be involved in the process. Other times, I feel like since the slices of bread I wish to use would not be the star of the dish anyway, I could as well buy a sandwich bread and I wouldn’t have to plan hours, or even days in advance to make myself a lunch.

That was before I had a GENIUS idea: adding baking powder in the dough. I know, it’s cheating, but so clever ;)! In an hour, you’ll have fresh homemade bread. It will be moist, just tasty enough not to upstage anything you put on it (as sourgdough bread, I find, tend to do). Plus, no kneading necessary! I know, I know; this is where you fall in love with me 😉.

You can of course jazz up the recipe as you wish by adding in your favourite bread ingredients. The only limit is your imagination ;).

*A spoon would work as well of you do not own one.

Here are 3 other versions of this bread recipe that are to die for !

Version #2 : Multigrain Bread

Multigrain Bread

Add (to dry ingredients)

2 tbsp uncooked millet (or quinoa)

2 tbsp flaxmeal

1 tbsp roasted sesame seeds

… or 5 tbsp of the grains/seeds of your choosing :)!

Version #3 : Sun-dried Tomato Bread

Sun-dried Tomato Bread

Add (to dry ingredients)

1/2 cup sun-dried tomatoes

1 tsp onion powder

1 tsp dried basil

1 tsp cayenne pepper flakes

Pepper to taste

I like to add 3 tbsp uncooked whole grains to give it a fun texture :).

Version #4 : Cinnamon-Raisins Bread

Cinnamon-Raisins Bread

Add (to dry ingredients)

1 tbsp ground cinnamon

1/2 cup raisins

1 tsp baking powder

Add (to wet ingredients)

2 tbsp maple syrup

To give it more of a brioche bread texture:

In a small bowl, mix

1 tbsp flaxmeal

3 tbsp water

Wait 5 min, then spread it on top of loaf before popping it in the oven. I use a brush to spread it evenly.
