Double Chocolate Fluffy Muffins

1- In a bowl, mix the dry ingredients

1 1/4 cup whole wheat flour*

3/4 cup date sugar**

1/2 cup cacao powder

2 tsp baking powder

2- In another bowl, mix the wet ingredients

1/2 tsp miso paste

1 tsp vanilla extract

1 cup plant-based milk

3/4 cup aquafaba***

1 tbsp apple cider vinegar

3- Pour wet ingredients over dry ingredients and mix. Do not over mix so as to make sure the muffins stay fluffy and do not get too dense.

4- Add 2/3-3/4 cup unsweetened chocolate chunks (to taste) and mix.

5-Pre-heat oven to 400 Fahrenheit (or 200 Celsius).

4- Distribute the batter into 6 muffin moulds.

5- Bake for 30 minutes, or until a toothpick inserted in the middle of a muffin comes out clean. (Melted chocolate chunks may have you believe the batter is not yet cooked properly at this point so be careful :) ).

6- Let cool for 10 minutes before eating. 


* You know how, depending on the quality of the whole wheat flour you use, it may taste a little too intense for pastries when compared to white flour? I found a clever way of solving that problem :)!

I throw my whole wheat flour in my Vitamix (I own the dry container, but you can definitely use the standard one, or even a standard blender. Simply stop once in a while to mix and scrape the side during the process).

The whole wheat flour will become finer as the bigger chunks of wheat will break down.

Another problem I often find I encounter when using whole wheat flour is that compared to the same quantity of white flour, it absorbs significantly more water. With this trick, since the whole wheat flour is finer and takes up slightly more volume, one cup of whole wheat flour suddenly equals one cup of white flour in any recipe as it pertains to both consistency and liquid absorption. It is magical !

** Date sugar is actually dried whole dates, powdered. By eating it, we therefore eat the whole fruit; fiber and all. It is 100% WFPB, 100% sweet and 100% delicious :)!

*** Aquafaba is the cooking water for chickpeas. Simply take a can of chickpeas (ideally BPA free) and keep the juice with which they come. Aquafaba has a similar texture to oil, but is not even close when it comes to nutritional value :)! It is also a great zero-waste and money-saving hack !


I promise, you won’t believe how amazingly chocolaty and delicious these muffins are. They are fluffy, wonderful and give you the impression that you are treating yourself to some real junk food! Even the pickiest of eaters will fall in love with them! 😃

Even though I know for a fact that I do not have to feel bad when eating one of them, I cannot help but to get a feeling of "chocolate and sugar overdose”. If you are having sugar and pastry cravings, this is the recipe for you.

Serve with a hot beverage for a complete immersion in the indulgence world ;).

This is the perfect afternoon pick-me-up.. or simply enjoy the muffins whenever you want.
